This is raw honey from my smallholding on the edge of Bath.
Nothing is added. Nothing is taken away.
It is unheated, unfiltered, and alive, just as the bees made it. This means it still contains the natural pollen, enzymes, and complexity that give real honey its depth of flavour and character. I harvest only surplus, prioritising the bees own supply.
The honey comes from my colonies of native British honeybees...Apis mellifera mellifera.
These are the original dark honeybees of Britain. They have lived on these islands since the last ice age, evolving alongside the native plants and climate. They are hardy, resilient, and deeply attuned to this landscape. By keeping and supporting them, I am playing a small part in preserving a lineage that belongs here... and helping ensure their future in a world where they have too often been replaced.
Their honey is a true expression of this land.
You may notice that the honey crystallises over time. This is a natural sign that it is raw and unprocessed. If you prefer it runny again, simply stand the jar in warm water.
Each jar is hand-filled in small batches on the smallholding and sealed in these robust, food-grade, recyclable plastic jars that are lightweight, shatter-resistant, and ideal for posting to you without smashing!
You'll notice the difference between this honey and the questionable sugar syrup sold in supermarkets........... "Real honey isn't cheap, Cheap honey isn't real!"
